Hi there, this is the third week of The Food Matters Project and I was especially excited about this week's recipe, Roasted Red Pepper and Walnut "Pesto", which can be found here.
I substituted the walnuts with almonds. And I really like the result. The basil, red peppers, garlic, almonds, and olive oil complement each other wonderfully. So far I've only tried it on a couple of crackers but I have plans on using it on some kind of pasta-type supper in the next couple of days.
On a side note, I tried making crackers from scratch for the first time ever. I followed this really good recipe. I used colby jack instead of cheddar but otherwise followed the ingredient list.
What I really like about both the pesto and the crackers is that they hardly take any time/equipment to come together. Both utilize a food processor and have a quick cleanup. I didn't realize how handy my 2nd generation (thanks Mom!) food processor would truly become until today.
Your pesto sounds like it turned out really well! Great idea to smear it all over homemade crackers!
